Salsa Chicken
You guys!
This is the easiest recipe EVER! It's also endlessly customizeable, but so good in it's basic form that I encourage you to make it just this way once and then make it yours. It's warm and comforting, easy to throw together, you probably already have the ingredients and all of the boys like it...like literally all of the boys.
Ingredients
4 medium Boneless skinless Chicken breasts
1 16 oz Jar of Pace Picante Salsa (your desired level of heat)
1 1/2 Cups of Sour cream
1 tsp Dried cumin
1 tsp Onion powder
2 tsp Minced or crushed garlic
Salt and pepper to taste
2 Cups Grated cheddar cheese
2 Cups White Rice (cooked as directed)
Directions
Preheat the oven to 350 degrees
In a 9x13 casserole dish, combine your salsa, sour cream, and spices. Stir well to combine.4
Optional* Prepare your chicken, I like to pound my chicken breasts a bit to tenderize them and to get them all one thickness for cooking purposes. If they're all one thickness, they'll cook more evenly and it will be easier not to overdo your chicken.
Place the chicken breasts in the casserole dish with the sour cream and salsa mixture. Turn the breasts to coat with sauce.
Place in the oven and bake for 30 minutes.
This is a good time to put your rice on to cook.
After 30 minutes, remove the pan and cover the whole mixture with cheese. Replace in the oven and cook just long enough to melt the cheese. About 10 more minutes.
