Grilled Huli Huli Chicken


This recipe is so simple and delicious. There are two musts with this one. Chicken thighs...I've tried it with breasts and it just does not work.... You must marinade this for 12-24 hours. It really makes a difference in taste and I encourage you to give it the full marinating time, you will be happy :-)


Ingredients:

  • 1 cup packed brown sugar

  • 3/4 cup ketchup

  • 3/4 cup reduced-sodium soy sauce

  • 1/3 cup sherry or chicken broth

  • 2-1/2 teaspoons minced fresh ginger root

  • 1-1/2 teaspoons minced garlic

  • 24 boneless skinless chicken thighs (about 6 pounds)

Directions

Mix all the marinade ingredients, add chicken and let it chill for 12-24 hours. Grill over medium high heat, brushing with reserved marinade until it reaches an internal temperature of 165...or eyeball it like I do, approximately 8 minutes on each side. Serve with sticky rice if you have it.
