Dreamy Sugar Cookies
I keep seeing these delicious sugar cookies all over Pinterest, that look like those really amazing ones you get at bakeries. Not the super fancy designed ones, but the simple one that are thick with craggy edges and a cloud like slather of frosting all over the top. So, I gave in and tried 'em out. As usual, I gave them a little twist to make them my own. They are easy to make, satisfy every bakery cookie craving, impress the pants off everyone and are endlessly customization. Do it!...Today!!!
Ingredients:
1 cup butter (softened)
3/4 cup coconut oil (melted) *you can use shortening, but the coconut oil really compliments the flavor on these
1 1/4 cups granulated sugar
3/4 cup powdered sugar
2 tbsp cream (can use half and half, or even water in a pinch)
2 eggs
1/2 tsp baking soda
1/2 tsp cream of tartar (can substitute 1 tsp of lemon juice)
1 tsp salt
5 1/2 cups flour
Frosting
1/2 cup butter (softened)
3 tbsp sour cream
4 cups powdered sugar
2 tsp vanilla
1/4 cup milk (or more to consistency)
food coloring of your choice (if desired)
INSTRUCTIONS
In a large mixing bowl or stand mixer cream together butter, coconut oil, sugar, powdered sugar and milk. Add eggs.
In a separate bowl combine flour, baking soda, cream of tartar and salt. Add the flour mixture to the butter mixture and mix until combined. The dough may be a little crumbly.
Roll into balls and place on cookie sheet. Spray the bottom of a glass or measuring cup with cooking spray and dip into sugar. Press each ball down to get the rough edge. These cookies don't spread much, so feel free to press down until you get the desired size. Just make sure that it doesn't get too thin - these are best when they are thick and soft. Bake for 10-12 minutes at 350 degrees. Allow to cool completely before frosting.
To make the frosting: cream together the butter and sour cream. Add vanilla or flavoring of your choice. Add powdered sugar gradually as well as milk until you reach the desired consistency.
