Dreamy, cheesy sauce over a carb of your choice **NOT MAC AND CHEESE IN ANY FORM

I swore I would NEVER make these stupid recipes that are healthy versions of things that are awful for you....Let's just call it what it is, it's not fake mac and cheese, it's not even close to mac and cheese, but you know what, it's REALLY good and it makes me feel good after I've eaten it. Also, my blood pressure is no longer high and I can now go up the stairs and not even breathe heavy, so that also tastes good :-) Just don't call it any version of mac and cheese, cause it's not ;-)




Ingredients:


1 Head of Cauliflower, steamed (in pieces or whole, whatever presentation you prefer

Alternately: 8oz pasta or a carb of your choice (you can use whole wheat, chickpea, or regular pasta)

  • 1 cup cottage cheese (I used 4% milkfat)

  • 1 cup milk (I used 2%)

  • 2 tablespoon cornstarch

  • 8 oz shredded sharp cheddar cheese (about 2 cups) *I have used many different kinds of cheese here, use your imagination. One of my favorite combinations is mozzarella and sharp cheddar.

  • 1/2 teaspoon salt

  • 1/4 teaspoon pepper

  • 1/3 teaspoon garlic powder

  • 1/4 teaspoon paprika



Directions:


  1. In a blender, combine the cottage cheese, milk, cornstarch, cheddar cheese, and seasonings. Blend until smooth.

  1. Pour the cheese sauce into a sauce pan and heat over medium-low heat. Cook for 4-5 minutes, stirring often until the sauce has thickened slightly. Be careful not to boil it, as this will cause it to get grainy and weird. You want to turn the heat down to low if you start seeing bubbles. This doesn't need to cook long, it just needs to thicken and get hot.

  2. Cook you carb of choice according to the package directions, OR cut your cauliflower into bite sized pieces and either steam or boil it. Be careful not to overcook it, or you'll end up with mashed potato texture, which would still be good!

  3. When your carb/vegetable choice is cooked, stir into the cheese sauce.

  4. Add additional seasoning to taste if desired. I have added a tiny bit of ranch seasoning, or everything bagel seasoning..so many choices, get creative!
