Fig and Goat Cheese Dip




Figs and Goat cheese seem to be a pretty popular combination these days. I've found that even people who don't like goat cheese really like this dip. Keep in mind that it is very rich, so it will go father than you think. I recommed serving this with toasted baguette slices. It is elegant and quite easy to prepare.

Ingredients:

2 Pounds Goat Cheese

14 Dried Mission Figs, roughly chopped

1/4 cup Dry Sherry or Marsala Wine

1/4 cup Olive Oil

2 Large Spanish onions, thinly sliced

10 cloves of garlic, crushed

3 Rosemary Sprigs

2 teaspoons salt

Freshly ground black pepper

2 sliced baguettes, toasted

Directions:

Preheat the oven to 350 degrees F.

1. Pour the olive oil into a large skillet and place over medium heat. Add the onions, garlic, rosemary, salt and pepper and cook, stirring often, for about 10 minutes, or until lightly browned.

2. Add the figs and Sherry and continue to saute until almost all of the sherry has been absorbed by the onions and figs.

3. Remove the mixture from the heat and layer in an oven proof pan.

4. Crumble the goat cheese over the top and place in the preheated oven and cook for 20 minutes or until the edges begin to bubble.

5. Remove and serve immediately with the sliced baguettes
