The Only Biscuits You'll Ever Make Again


The weather has turned a little cold here in Idaho. There is snow in the mountains and there is frost on my windshield in the mornings. While I don't relish the freezing cold car in the morning, I really do love the crisp cold air and the beautiful scenery that comes with winter in Idaho. It's days like this that call for warm comfort food and biscuits are on my list! They're the perfect vehicle for so many things that are good and lovely in this world. Sausage gravy, homemade jam, eggs and bacon...Oh my gosh, I could go on and on (I wish you could feel the passion in my heart :-) )

This recipe is the perfect all purpose biscuit and it bakes beautifully from frozen, so make a double batch and store the extra's in your freezer, you'll thank yourself later! This recipe makes 10-12. It's the EASIEST recipe to stir together and I have NEVER had them fail. They also easily adapt to add ins, both in the dough or after the fact. Today, I made them with bacon, cheddar and chives. And oddly enough I put raspberry jam on it and it was DElicious!.

Ingredients:

3 Tbs. butter, melted 2 cups all-purpose flour 1 Tbs. baking powder 3/4 tsp. teaspoon salt 1 tsp. sugar (optional) 1 1/2 - 2 cups heavy cream

Directions:

1. Preheat the oven to 425°F and line a baking sheet with parchment paper.

2. Melt butter in a microwave safe dish, and set aside.

3. Combine the flour, baking powder, salt and sugar (if you choose) into a large bowl.

4. At this point, you can add in any of your chosen ingredients. Toss them to evenly mix into the dry mixture before adding the cream.

5. Fold in 1 1/2 cups cream. If the dough is not soft or easily handled, fold in the remaining 1/2 cup cream, little by little. The dough should barely hold together and it's ok if there's a little dry flour at the bottom. Also, Be careful not to over-mix or your biscuits will be tough.

6. Turn dough onto a floured surface, mound it into a ball and, using your hands, press it to a thickness of about 1 inch. Cut into your desired shape. I typically do the traditional round, but gosh, get creative :-)

7. Gather the scraps and continue to cut into your chosen shape.

8. At this point, you can freeze your biscuits for later baking if you desire. They bake beautifully from frozen and who doesn't love a freshly baked biscuit?

9. Just before baking, dip the top of each biscuit in melted butter and arrange on the baking sheet. Bake until golden, 12 to 15 minutes. (20 if baking from frozen)

10. Serve immediately and EnJoy!

Some add in suggestions:

Blueberries (include the sugar in this version) Raspberries and white chocolate chips (again, include the sugar in this one) Bacon and cheddar cheese (see picture above) Green chili's and bits of chorizo (sprinkle a dusting of chili powder on top of these) Cheddar and jalapeno Lime and lemon zest with coconut and white chocolate chips (sugar too)
