Rosemary Browned Butter Popcorn


I've been responsible for feeding 7 men at work this week. That's 7 men everyday, and sometimes more than that. We're talking snacks, morning and night, and lunch. The up side: Men usually like anything you give them to eat...If it's free :-) The down side: I have standards, and I refuse to feed them the same thing every day, and I refuse to feed them only processed food that come out of a box(note the irony here, I'm using microwave popcorn in this recipe). I know, I'm such a food snob. Lucky for you, I'm always on the hunt for new recipes, and this one is outstanding and SUPER simple.

Ingredients:

3 bags of microwave popcorn (I used Orville Redenbacher's Natural Lightly Salted Popcorn which can be found at Wal-Mart) 1/2 Cup of butter 1 Tbs of finely chopped fresh Rosemary 1/2 Cup of shredded Parmesan Cheese

Directions:

Pop the popcorn according to the instructions on the bag. Place all in a large bowl and set aside.

Chop the rosemary and set aside.

Melt the butter on medium high - high heat. As soon as the butter starts to boil, add the rosemary. Keep cooking the butter, stirring occasionally, until it forms a thick foam and turns a dark golden brown color. When it foams, you will want to keep stirring it so that you can properly gauge the level of brownness. If you have never made browned butter, you will understand what I mean here the first time you do it. Once the foam has turned a dark golden color, remove from heat. Drizzle the browned butter over the popcorn, making sure to get all of the brown bits off the bottom of the pan (that's where the flavor is). Sprinkle the Parmesan cheese over and toss to coat.
